Broiled Scampi Romano

Use leftover Caesar salad dressing to make this quick broiled version of shrimp scampi.

6 tablespoons of reserved Caesar salad dressing
2 tablespoons freshly grated parmesan
1 pound large shrimp, peeled and deveined
prep: 10 minutes
total: 1 hour 10 minutes

1. Combine the reserved dressing with the cheese. Toss the shrimp in this marinade, cover and refrigerate for at least an hour.
2. Remove the shrimp from the marinade and broil 3 inches from a high flame for 1 to 2 minutes per side, basting with additional marinade when you turn the shrimp. Cook until the shrimp are firm and opaque.
3. Serve with rice or pasta.
