Broiled Asian-Style Game Hens

Use reserved orange braised peppers and carrots to make this succulent poultry dish.

3 cloves garlic, minced
1 tablespoon finely chopped ginger root
1 teaspoon honey
1 tablespoon dark sesame oil
2 teaspoon soy sauce
2 game hens, split lengthwise with backbone removed
2 cups reserved orange braised peppers and carrots

1. In a small saucepan, combine the garlic with the ginger root, honey, sesame oil and soy sauce. Heat until the honey melts, about 1 minute, stirring frequently.
2. Pour the marinade over the game hen halves and toss to coat thoroughly. Refrigerate for at least 1 hour.
3. Remove the hens from the marinade and broil 4 inches from a high flame for 10 minutes per side.
4. After turning the hens, warm the reserved bell peppers and carrots in a skillet just until heated through. Keep warm.
5. To serve, mound 1/2 cup of the vegetables in the center of each of 4 plates and place a hen half on each.
