Seafood-Stuffed Pasta Shells

serves 4

Use leftover braised cod and spinach bread to make these hearty baked stuffed pasta shells.

This recipe is part of Andrew Schloss's Sunday Dinners.



ingredients

12 to 16 jumbo pasta shells
2 cups reserved crumbled cod from braised cod
1/4 cup reserved spinach mixture from spinach bread
1/4 cup sauce from braised cod
2 cups vegetable juice cocktail
Juice of 1/2 lemon

instructions

1. Cook the pasta shells in a large pot of salted boiling water until just tender, about 15 minutes. Do not over cook. Drain.

2. Meanwhile, combine the reserved cod with the reserved spinach mixture and the reserved sauce. Stuff the shells with this filling, and place stuffed-side up in a large baking pan.

3. Mix the vegetable juice with the lemon juice and pour over the shells.

4. Bake in a preheated 350F oven for 25 minutes until heated through or microwave at full power for 6 minutes.
