Roasted Garlic Chicken With Honey And Balsamic Vinegar

Use leftover roasted garlic from braised sirloin tips as a shortcut for this luscious roasted poultry dish.

2 game hens, halved lengthwise; 2 split chicken breasts; or 4 chicken legs

2 tablespoons olive oil
2 tablespoons honey
1 tablespoon balsamic vinegar

1. Place the poultry in a roasting pan, making sure that breast pieces or game hen halves are facing bone-side down. Roast in a roasting pan in a preheated 450F oven for 30 minutes.
2. Meanwhile, mash the garlic and whisk with the olive oil, honey, a sprinkling of salt and pepper and vinegar. Brush onto chicken and roast another 15 minutes. Turn chicken over and brush with remaining sauce. Roast another 15 minutes.
