Champagne Cocktail

The inherent beauty of the Champagne Cocktail goes beyond its suave appearance and silken palate: it can also be 4 to 20 times cheaper than Champagne.

1 dash Angostura bitters
1 sugar cube
Cold, dry Champagne
1 twist lemon peel
prep: 5 minutes
total: 5 minutes
Chilled Champagne glass
1. Add the dash of bitters to the sugar cube and let it soak in.
2. Place the cube in the bottom of a chilled Champagne glass and slowly pour in the Champagne. Garnish with a lemon twist.
Variations:
Champagne Normande: Add a teaspoon of Calvados to the basic recipe.
Kir Royale: Add a splash of crème de cassis to the Champagne.
