Microwaved Cod Nicoise

Leftover caponata makes an instant sauce niçoise for cod in this fast, healthy dish.

1 1/2 pounds cod fillet
1 tablespoon virgin olive oil
1 tablespoon finely grated orange zest
1 clove garlic, minced
2 tablespoons lemon juice
1 cup reserved caponata
prep: 5 minutes
total: 10 minutes
10-inch glass baking dish
plastic wrap

1. Rub the cod and the interior of the baking dish with the olive oil.
2. Mix the orange zest with the garlic and a sprinkling of salt and pepper. Rub all over the fish and place in the baking dish.
3. Sprinkle the lemon juice over the fish and top with the caponata.
4. Cover with plastic wrap and microwave at full power for 3 minutes and 30 seconds. Poke the plastic wrap to release the steam and serve immediately.
