Lentil Soup With Italian Sausage

Lentil soup made with pre-cooked leftover curried lentils is beefed up with Italian sausage for a fast, hearty meal.

1 onion, chopped
3/4 pound hot Italian sausage, chopped
2 cups reserved curried lentils
1 teaspoon ground cumin
2 cups vegetable cocktail juice
1 1/2 cups chicken broth
prep: 5 minutes
total: 15 minutes
large saucepan
1. In a large sauce pan over medium-high heat, cook the onion and sausage together until the sausage loses its raw look and the onion has softened, about 4 minutes.
2. Add the reserved lentils and the cumin and stir to combine.
3. Mix in the vegetable cocktail juice and the chicken broth. Simmer for 10 minutes.
