Spicy Cucumber And Mint Raita

Use this spicy cucumber, mint and yogurt raita as a sauce for grilled lamb or eat it on its own with pita bread or couscous.

3 large cucumbers, peeled
1/4 teaspoon salt
3 tablespoons olive oil
1 teaspoon minced garlic
1/4 cup chopped mint leaves
Juice of 1/2 lime
2 teaspoons hot pepper sauce
1/2 cup plain yogurt

1. Cut the cucumber in half lengthwise. Scoop out the seeds with a spoon and cut each cucumber half in thin slices. Toss with salt. Set aside.
2. Mix the oil with the garlic, mint, lime juice, hot pepper sauce and yogurt. Mix in the cucumber slices. Refrigerate until serving.
