Baked Lemon-Mustard Bluefish

Nothing could be simpler or more nourishing than baked fish, made more exciting with a slathering of mustard.

1 1/2 pounds bluefish fillet
2 teaspoons olive oil
3 tablespoons reserved lemon-mustard
prep: 5 minutes
total: 20 minutes

1. Preheat oven to 400F.
2. Rub the fish fillets with the olive oil. Place skin-side down in a single layer in a large baking dish. Season to taste with salt and pepper.
3. Bake in preheated oven for 10 minutes. Brush with reserved lemon-mustard (link) and bake another 5 to 8 minutes, until the fish flakes to gentle pressure.
