Roasted Garlic Potatoes
serves 4-6
A pan of warm roasted potatoes is the perfect side dish to any winter meal. If you have some left over, try mixing them with some meat and onions to make a stir-fry of turkey, potatoes and sweet onions.

8 large russet potatoes, scrubbed (about 5 pounds)
Olive oil
2 cloves garlic, finely chopped
prep: 15 minutes
total: 1 hour 5 minutes
2 large rimmed sheet pans or baking pans
1. Preheat the oven to 450F.
2. Cut each potato lengthwise into 8 pieces. Oil 2 large rimmed sheet pans or baking pans with the olive oil. Arrange the potatoes in the pans and drizzle with olive oil. Scatter the chopped garlic over the top and season generously with salt and pepper. Toss well.
3. Roast for 45 to 50 minutes, turning every 15 minutes or so, or until the potatoes are tender and well browned.
