Tomato-Rice Soup

This simple soup is a perfect first course before Bollito Misto, or with just a grilled cheese sandwich.
This recipe is part of Andrew Schloss's Sunday Dinners.
6 cups of broth from bollito misto or other flavorful broth
1/2 cup long grain rice
1/2 cup canned crushed tomatoes
2 tablespoons chopped parsley
prep: 5 minutes
total: 25 minutes

1. Heat the broth to a boil.
2. Add the rice and simmer for 15 minutes.
3. Add the tomatoes and parsley and heat for 1 more minute.
