Italian Parsley Sauce
makes about 1 cup
This fresh green sauce with garlic and anchovies is lovely as a dipping sauce for boiled meats or vegetables.

1/2 cup finely chopped parsley
8 anchovy fillets, finely chopped
2 cloves garlic, minced
2 teaspoons spicy brown mustard
2 tablespoons red wine vinegar
6 tablespoons olive oil
