Warm Red Chili Sauce
makes about 1 cup
This fiery red hot sauce made with chilies and sweet peppers is served warm. It's the perfect accompaniment to boiled meat dishes or your favorite Mexican fare.

2 large red bell peppers, stemmed, seeded and quartered
1 hot chili, stemmed, seeded, and minced
1 small onion, chopped
1 clove garlic, peeled
2 tablespoons red wine vinegar
Juice of 1/2 lemon
2 tablespoons olive oil
prep: 5 minutes
total: 20 minutes
heavy saucepan
blender or food processor
1. Combine all ingredients in a heavy saucepan, and cook, covered, over medium heat until the peppers are soft, about 15 minutes.
2. Purée and serve warm.
