Boiled Lobster

Keep the lobster chilled (and alive) until you boil it. If you aren't planning on cutting it up to use in a recipe, heat up some lemon juice, minced shallots and butter for a great dipping sauce.

2 pinches kosher salt
1 lobster
prep: 5 minutes
total: 25 minutes
large stockpot (with lid)

1. Fill your largest stockpot with water to the halfway point and add salt. Cover and bring water to a boil.
2. Use tongs to drop the lobster into the boiling water. Loosely cover. Boil 1-pound lobsters for 15 minutes; add 5 minutes for each additional 1/2 pound.
