Spinach Sauteed With Bacon And Walnuts

The smoky flavor of bacon is perfect with spinach and walnuts. If you have leftovers, try using them in a dish of potato and spinach gnocchi or as filling for an omelet.

4 slices bacon, finely chopped
1/4 cup chopped walnuts
1 1/2 pounds fresh spinach leaves, washed, shaken dry, and coarsely chopped

total: 15 minutes

Cook the bacon in a large skillet over medium heat until crisp. Add the walnuts and toss until lightly browned, about 30 seconds. Add the spinach and toss until the spinach has wilted, about 45 seconds. Remove from the heat and season with salt and pepper.
