Buttered Noodles With Parsley

This is the ultimate in simple side dishes -- just noodles with butter and a little parsley. It's wonderful next to rich main courses like a roasted pork loin.

1/2 pound dried fettuccine, broken in half
1 tablespoon butter
2 tablespoons plus 1 teaspoon olive oil
1 tablespoon chopped parsley
prep: 5 minutes
total: 15 minutes

1. Bring a large pot of salted water to a rolling boil. Add the fettuccine and stir to separate the noodles; cook until the noodles are al dente, about 10 minutes. Drain.
2. Place the fettuccine in a serving bowl and toss with the butter, oil, parsley and a sprinkling of salt and pepper until well-coated. Serve immediately.
