Tortellini With Hot Sausage And Broccoli

This is a great way to use up leftover sausage. Just toss together the ingredients and you have dinner in a flash.

3/4 pound broccoli
2 hot sausages, cooked
1 pound frozen or refrigerated meat or cheese tortellini
1 clove garlic, finely chopped
2 tablespoons olive oil
3 tablespoons freshly grated parmesan

1. Peel the tough outer stalks of the broccoli and cut it in half lengthwise. Thinly slice the stems, and cut the tops into small florets. Set aside. Coarsely chop the sausage.
2. Cook the tortellini in a large pot of salted boiling water (3 minutes if refrigerated, 5 minutes if frozen). Add the broccoli and cook 5 more minutes, until the tortellini and broccoli are tender. Add the reserved sausage and the garlic and heat through. Drain and toss in a bowl with the olive oil, parmesan and a sprinkling of salt and pepper. Serve immediately.
