Papaya Frozen Yogurt

The beauty of this frozen yogurt is that it tastes as good as ice cream but is healthier and requires virtually no cooking. If you drain the yogurt and chop and freeze the fruit ahead of time, it can be thrown together on a whim.
1 to 2 tablespoons drained plain yogurt
1 to 2 handfuls chopped papaya, frozen
1 splash white rum or lime juice (or to taste)
1 tablespoon honey (or to taste)
Lime zest (optional)
Coconut milk (optional)
prep: 15 minutes
total: 15 minutes, plus at least a few hours for draining yogurt

1. Drain the yogurt: In a sieve lined with cheesecloth, drain plain yogurt for a few hours or overnight.
2. Prep the papaya: Peel and slice the fruit; place in a freezer bag and freeze for a few hours or overnight.
3. Make the frozen yogurt: Combine drained yogurt, frozen papaya and splash of white rum or lime juice in a food processor or blender. Pulse until smooth. Taste for sweetness, adding honey if needed or desired and pulsing again to combine. At this point, you can also add in lime zest. Add a bit of water or coconut milk if the mixture seems too thick. Serve immediately.
