Peach Frozen Yogurt

makes 1 serving

The beauty of this frozen yogurt is that it tastes as good as ice cream but is healthier and requires virtually no cooking. If you drain the yogurt and chop and freeze the fruit ahead of time, it can be thrown together on a whim. You can substitute ripe nectarines if desired.


1 to 2 tablespoons drained plain yogurt
1 ripe peach, pitted, chopped and frozen
1 splash white rum (or to taste)
1 to 2 teaspoons honey (or to taste)
1 dash nutmeg (or to taste)


prep: 15 minutes
total: 15 minutes, plus a few hours to drain yogurt and freeze fruit

1. Drain the yogurt: In a sieve lined with cheesecloth, drain plain yogurt for a few hours or overnight.

2. Prep the peach: Pit and slice the fruit; place in a freezer bag and freeze for a few hours or overnight.

3. Make the frozen yogurt: Combine drained yogurt, frozen peach slices and splash of white rum in a food processor or blender. Pulse until smooth. Taste for sweetness, adding honey if needed or desired and a dash of nutmeg and pulsing again to combine. Add a bit of water if the mixture seems too thick. Serve immediately.
