Strawberry Frozen Yogurt

The beauty of this frozen yogurt is that it tastes as good as ice cream but is healthier and requires virtually no cooking. If you drain the yogurt and chop and freeze the fruit ahead of time, it can be thrown together on a whim.
1 to 2 tablespoons drained plain yogurt
1 to 2 handfuls chopped strawberries, frozen
1 splash white rum (or to taste)
1 to 2 teaspoons honey (or to taste)
prep: 15 minutes
total: 15 minutes, plus a few hours to drain yogurt and freeze fruit

1. Drain the yogurt: In a sieve lined with cheesecloth, drain plain yogurt for a few hours or overnight.
2. Prep the strawberries: Hull and cut the strawberries in half; place in a freezer bag and freeze for a few hours or overnight.
3. Make the frozen yogurt: Combine drained yogurt, frozen strawberries and splash of white rum in a food processor or blender. Pulse until smooth. Taste for sweetness, adding honey if needed or desired and pulsing again to combine. Add a bit of water if the mixture seems too thick. Serve immediately.
