Vanilla Ice Cream
makes about 1 quart
Though everyone has their favorite ice cream flavor, sometimes nothing beats plain old vanilla, especially accompanied by a warm slice of pie or dark chocolate cake. This recipe calls for whole vanilla bean to give the ice cream authentic vanilla flavor.
1 cup whole milk
1 vanilla bean
5 egg yolks
3/4 cups granulated sugar
1/8 teaspoon salt
2 cups heavy cream
prep: 20 minutes
total: 50 minutes, plus time for freezing

1. In a medium saucepan over medium heat, bring milk and vanilla bean just to a simmer. Remove from heat. Split the vanilla bean lengthwise and scrape the seeds into the saucepan. Discard the pod.
2. In a medium bowl, whisk the yolks, sugar and salt until pale yellow, about 5 minutes. Gradually whisk in the vanilla milk and pour the mixture back into the suacepan.
3. Cook the mixture over low heat, whisking constantly until it begins to thicken, 8-10 minutes. When the custard coats the back of a spatula, remove from heat and stir in the cream.
4. Chill for at least 30 minutes. When the mixture has thoroughly cooled, freeze in an ice cream maker according to the manufacturer's instructions.
