Sweet Red Bean Paste
makes 1 1/2 cups red bean paste
You can buy ready-made red bean paste, but if you can find dry red adzuki beans at an Asian market, it isn't difficult to make your own. (Do not substitute kidney beans.) Use the paste to fill steamed buns.

1 cup dried adzuki beans
1/2 cup light brown sugar
2 tablespoons oil

total: 2 hours 10 minutes

1. Place the beans in a large pot. Cover with water and boil until soft (warning: this can take about 2 hours, depending on your beans), adding additional water if needed.
2. Drain the beans and mash with the sugar.
3. Heat the oil in a pan, add the beans and cook until all of the moisture has cooked out. Store in an air-tight container. Use to fill steamed red bean buns.
