Butter Beans

Simmered with onion, thyme and sage leaves, these butter beans are smooth and creamy and make a perfect side dish for a Southern meal.

3 cups water
1/2 onion, quartered
1 bay leaf
2 sprigs fresh thyme
4 fresh sage leaves
1/2 pound beans (butter, lima or fava)
1 teaspoon olive oil
prep: 5 minutes
total: 25 minutes
medium heavy-bottomed pot

1. In a medium heavy-bottomed pot, bring the water, onion, herbs and a generous pinch of salt to a rapid boil.
2. Reduce the heat to simmer and add the beans. Cook until tender, about 15 minutes.
3. Strain out any excess liquid and serve hot, drizzled with olive oil.
