Roasted Blue, Red And Gold Potatoes

Comfort food doesn't get any easier than roasted tri-colored potatoes sprinkled with sea salt. This is fast food at its best.

1 bag tri-colored potatoes (or 4 to 5 each small red, blue and yellow potatoes), halved or quartered
Extra virgin olive oil
Sea salt
prep: 10 minutes
total: 55 minutes

1. Preheat the oven to 375F.
2. Prep the potatoes and toss with oil in a roasting pan, arranging the potatoes in a single layer.
3. Roast until they turn crispy and tender, stirring them half way through baking time to make sure each slice browns evenly, about 45 minutes.
4. Sprinkle generously with sea salt.
