Roasted Sausages With Peppers, Onions, Potatoes And Thai Eggplant

Sausage with peppers and onions is a classic combination, but the eggplant and lemon-infused olive oil keep things lively.

1 pound potatoes, peeled and cut into 1-inch chunks
1 red bell pepper, cored, seeded and cut into 1-inch pieces
1/2 medium Vidalia onion, cut into 1-inch chunks
1/2 medium red onion, cut into 1-inch chunks
1 6- to 8-inch green Thai eggplant
1/4 cup lemon-infused olive oil
1 pound Italian-style turkey sausages

total: 35 minutes
1-2 shallow roasting pans
1. Preheat the oven to 450F.
2. Spread the vegetables and sausages in a single layer in one more more shallow roasting pans; do not crowd them, or they will not brown. Drizzle with the oil and sprinkle with salt and pepper to taste. Stir well.
3. Roast for 15 to 30 minutes, or until sausages and vegetables are cooked through. Serve hot.
