Italian Sausage Pita Pizza With Peppers And Carrots

serves 2

Using pita bread as pizza crust is fast and easy -- and it crisps up nicely. The carrots, onions and peppers on this pizza also add a nice crunch and a burst of color.


1 tablespoon olive oil
2 links Italian sausage, casing removed
2 pitas
1/4 cup tomato sauce
1/2 red onion, thinly sliced
1/2 white onion, thinly sliced
1 carrot, chopped
1 yellow bell pepper, diced
1/2 cup grated mozzarella
8 basil leaves


prep: 10 minutes
total: 20 minutes


nonstick sauté pan


1. Preheat the oven to 500F.

2. Heat the olive oil in a nonstick sauté pan over medium-high heat. When the oil is hot and shimmering, add the sausage and stir, breaking it up into small chunks. Leave the sausage alone to brown for 2 minutes, then stir to brown on all sides, about 2 minutes more.

3. Place the pitas on a baking sheet and spread with tomato sauce. Top with onion, carrots, pepper, sausage and mozzarella. 

4. Place the basil leaves on top of the pizzas and bake until cheese is melted and bubbling, 5-10 minutes.
