Italian Sausage

Our family friend, Linda Coronato, who created this recipe, once remarked that there is more than one way to serve Italian sausage. Splitting and marinating the sausages creates a new flavor profile.

3-4 tablespoons olive oil
3 tablespoons chopped fresh oregano
3 cloves garlic, minced
2 teaspoons crushed fennel seeds
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
2 1/2 pounds fresh sweet Italian sausage links, split
prep: 20 minutes
total: 20 minutes, plus at least 2 hours to marinate

1. In a medium bowl, whisk together the oil, oregano, garlic, fennel seeds, salt and pepper to make a marinade. Add the sausage, toss to coat, cover, and refrigerate for at least 2 hours before grilling.
2. Preheat the grill. Remove the sausages from the marinade and discard the marinade. Grill the sausages for 4 minutes per side or until cooked through.
