Lara’s Zhatar
makes about 1/4 cup
The recipe for zhatar (sometimes zaatar, sometimes za’atar) varies by region, but usually includes thyme, sesame and ground sumac. I've added ground pistachios into the mix -- it may not be traditional, but I highly recommend it.

1 tablespoon pistachios
1 tablespoon thyme leaves, fresh or dried
1 tablespoon Turkish oregano (optional)
1 tablespoon sesame seeds
1 tablespoon red chile flakes (optional)

Grind the pistachios in a spice grinder until you have coarse crumbs. Mix with the remaining ingredients. Sprinkle on yogurt, hummus, toasted, olive-oil-brushed pita or lavash, grilled meat or salads. (This mixture should keep for at least 1 week in a sealed plastic bag.)
