Coconut Frozen Yogurt

makes about 3 cups

Here’s a frozen yogurt recipe that tastes tangy, clean and crisp. Try it for yourself and you might just be smitten with fro-yo, all over again.

3 cups Greek-style yogurt
3/4 cup sugar
1 teaspoon coconut extract
1/2 cup sweetened coconut flakes


prep: 5 minutes
total: 1 hour 5 minutes, plus time for freezing

1. Mix yogurt, sugar and coconut extract. Let it chill in the refrigerator for 1 hour to let the sugar dissolve. Following instructions that came with your ice cream maker, churn until the mixture is the consistency of soft ice cream.

2. Meanwhile, while the frozen yogurt is churning, toast coconut. Set a dry skillet on medium heat and add the coconut flakes. Stir constantly until flakes toast to a golden brown. Remove from heat immediately, and set aside. To serve, sprinkle the toasted coconut on top of your frozen concoction.
