Slow-Cooked Beef And Scrambled Egg Breakfast Burrito

Using the slow cooker to make breakfast is sort of a new concept. With this simple meat-braising technique, beef before coffee suddenly seems like a genius move.

1 pound beef
1 (12-ounce) can salsa
1 white onion, chopped
2 flour tortillas
1/2 cup shredded Monterey Jack cheese
3 eggs, scrambled
prep: 20 minutes
total: 25 minutes, plus 10 hours braising time

1. Place beef, salsa and onion in a slow cooker. Stir to blend and cook on the low setting for about 10 hours, undisturbed.
2. After 10 hours, remove the beef from the sauce, and wrap it into a big flour tortilla with shredded cheese and some scrambled eggs.
3. Whirl the cooking liquid in a blender, place the burritos in an ovenproof dish, pour the liquid over the burrito, top with more cheese, and bake in a preheated 350F oven until the cheese is melted.
