Sweet Cress And Fruit Salad With Grapefruit-Verjus Vinaigrette

Verjus is the unfermented juice of unripe grapes. Use it like you would a vinegar, for dressings or marinades, or even for poaching fish or chicken.

1 bunch watercress (or Bibb lettuce)
8 small, ripe Mission figs, sliced
2 Satsuma tangerines, sliced (or sectioned)
2 teaspoons grapefruit vinegar
2 tablespoons verjus
1/2 teaspoon Dijon mustard
1/4 cup extra virgin olive oil
Granola, croutons, nuts, and/or crumbled bleu or goat cheese, for garnish

1. Arrange the watercress, figs and tangerines on salad plates.
2. In a small bowl, whisk the vinegar, verjus and mustard to blend and season with salt and pepper to taste; whisk in the oil until emulsified. Drizzle the vinaigrette over the salad, and garnish with granola and bleu cheese, or whatever you have on hand.
