Grilled Summer Squash Vinaigrette

The combination of grilled vegetables and vinaigrette makes a delicious warm salad -- a harmony of roasted aromas, wine vinegar and fragrant olive oil.

1/2 cup olive oil
1/4 cup red wine vinegar
3 tablespoons lemon juice
1 clove garlic, minced
1 pinch cayenne
4 zucchini, stemmed and sliced lengthwise, into 1/2-inch thick slices
4 yellow summer squash, stemmed and sliced lengthwise, into 1/2-inch thick slices
prep: 20 minutes
total: 30 minutes, plus time to heat grill

1. Whisk together the oil, vinegar, lemon juice, garlic, cayenne and a sprinkling of salt and pepper.
2. Marinate the zucchini and yellow squash in this dressing for 10 minutes.
3. Grill vegetables for 2 to 4 minutes per side over a hot fire and toss with enough dressing to moisten.
