Sesame Noodles With Cucumber
serves 2-4
This simple recipe is a fantastic side with other Asian-inspired dishes. If you're not a big fan of spicy food, you may wish to go a bit more gently on the chili flakes.

8 ounces linguine (or pasta of your choice)
3 tablespoons tahini
1 teaspoon chili flakes
2 tablespoons water
1 tablespoon soy sauce
1 tablespoon honey
Juice of 2 lemons
1/2 bunch Italian flat-leaf parsley
2 cloves of garlic, crushed
2 green onions, sliced on the bias
1/2 cucumber, sliced on the bias
2 tablespoon salted crushed peanuts (for garnish)

1. Cook the pasta until al dente, strain and run under cold water to cool. Make sure that all the pasta has cooled before you set aside, or it will tend to stick together.
2. In a large bowl combine the tahini, chili, water, soy, honey and lemon juice. Add salt and pepper to taste.
3. Chop the parsley, crush the garlic and slice the green onions and cucumber on a bias.
4. Add to the tahini mixture, and stir to coat. Let sit for about 5 minutes.
5. Add the pasta and gently fold to coat, being careful not to over-stir.
6. Top with the chopped peanuts if desired.
