Strawberries With Reduced Balsamic And Black Pepper

This is an Italian classic. For good reason: the rich tartness of the balsamic and the spice of the freshly ground black pepper pick up and highlight those same qualities in the strawberries, isolating and enhancing the strawberries' inherent fruity sweetness.
1 pound ripe strawberries, hulled and halved
1/2 cup medium quality balsamic vinegar
freshly ground black pepper

1. Rinse and dry the strawberries. Cut off their tops and cut them in half lengthwise.
2. Meanwhile, put the balsamic vinegar in a small saucepan. Simmer it over medium-high heat until it's thick but still pourable, 1-3 minutes.
3. Arrange the strawberries on plates, drizzle them with the balsamic vinegar and season them lightly with freshly ground black pepper. Add more black pepper to taste.
