Lemon-Pepper Broccolini
serves 2-4
Broccolini is like baby broccoli. It’s sweet and best eaten lightly cooked. It’s a little more elegant than regular broccoli, but regular broccoli will also work here.

1 tablespoon olive oil
1 pinch sea salt
1 bunch broccolini, sliced into pieces
1/2 teaspoon red pepper flakes
Lemon juice

1. Add olive oil, salt, red pepper flakes and a sprinkling of black pepper to a saucepan and place on medium heat.
2. Once it's hot, add the broccolini, using tongs to coat the broccolini in the oil and spices. If your broccolini has slender, tender stems, you can cook it fully this way. If the stems are a little thicker, you can add a couple tablespoons of water and cover the pan with a lid. This will quick-steam the broccolini, but the water will evaporate off so you won’t have to drain it.
3. Once the broccolini is bright green and tender but still crisp, squeeze some lemon juice over the stalks and serve.
