Grilled Halibut With Caper-Butter Lemon Juice

Here’s a quick sauce for grilled fish that delivers a huge lemon punch. It’s less a lemon-caper butter than a caper- and butter-flavored lemon juice.

2 halibut filets (about 3/4 pound total)
Olive oil
3 tablespoons butter
2 tablespoons capers
2 tablespoons freshly squeezed lemon juice

total: 15 minutes
grill pan (or grill)

1. Preheat grill pan over medium-high heat.
2. Pat the fish dry. Brush with the olive oil and season with salt and pepper on both sides.
3. Grill halibut five minutes on the first side, and 2 to 5 minutes on the other side, depending on the thickness of the fish.
4. Meanwhile, melt the butter over low heat in a small saucepan. When melted, stir in the capers and lemon juice, and season with salt and pepper.
5. Serve the sauce over the fish right when it comes off the grill.
