Mango, Blueberry And Ginger Salad

serves 2-4

Sweet tropical mangoes, ripe but tamer blueberries, spicy ginger and tart lime juice are a match made in heaven. Have this versatile salad for lunch with cottage cheese, topped with whipped cream as dessert, or alongside roasted pork tenderloin.



ingredients

2 limes, zested and juiced
1/3 cup water
1/3 cup granulated sugar
2 large mangoes, peeled and cut into bite-size pieces
3 cups fresh blueberries
1/4 cup finely chopped crystallized ginger

total: 30 minutes

strainer or slotted spoon
medium bowl

instructions

1. Thoroughly wash and dry the limes. Combine the lime zest, water and sugar in a small saucepan. Stir to dissolve the sugar then simmer, uncovered, 2-4 minutes. Remove the pan from the heat, stir in the lime juice and set the syrup aside for 20 minutes.

2. With a strainer or slotted spoon, remove and discard the lime zest. In a medium bowl, toss together the mango pieces, blueberries and syrup. Sprinkle with the ginger and serve.
