Lemon Granita

Imagine sitting on the front porch on a balmy summer night, watching the fireflies glow in the distance. Lemon Granita is a great dessert to have in hand, and has such a refreshing flavor. It satisfies the craving for something cold and sweet. It is a light, refreshing, fat-free, frozen and simple dessert. Mix it up in advance and put it in the food processor immediately before serving. The vibrant lemony flavor and the cool feeling of the frozen ingredients is a great way to refresh on a hot day.

More sugar can be added depending on your flavor preference. Also, artificial sugars can be used to as a substitution for special dietary needs in place of the regular sugar.

Equipment
saucepan 
ice cube trays 
food processor 

Shopping List
lemon juice 
water 
sugar 
lemons  

Instructions:

In a saucepan, combine all ingredients and bring them to a simmer. Stir until the sugar is dissolved.  
 
Cool and place in ice cube trays. Freeze until hard, about 2 hours.  
 
Just before serving, put several cubes into a food processor fitted with a metal blade. Process until smooth, serve immediately.
