Pressed Ham, Apple And Brie Sandwich
Salty ham, creamy Brie and a tart Granny Smith make fine companions. Here, we combine them in a pita sandwich, pressed it in a skillet with a little butter. The result is browned, buttery, crispy bliss. Vary the ratio of ham, cheese, apple and bread to suit your taste.
2 pieces of pita bread
4 slices thick-cut ham
4 slices Brie
1/2 Granny Smith Apple, cored and thinly sliced
1 tablespoon unsalted butter

total: 20 minutes
panini press (or cast iron pan)
1. Preheat the oven to 200F. Slice the pitas open on one end by making a horizontal cut along the fold. Fill each pita pocket with the ham, cheese, Brie and apple slices.
2. Melt half the butter over medium heat in a nonstick skillet. When the butter is hot, add one of the sandwiches to the pan. Put a panini press (or other weight) on top of the pita to press it down. Cook until the bread is toasted and the cheese is melted, 3-5 minutes per side. You may need to lower the heat to medium or medium-low as the pan keeps getting hotter.
3. Put the first sandwich in the oven to keep it warm while you cook the second sandwich with the remaining half tablespoon of butter. Slice each sandwich in half before serving.
