Matzo Brie

Matzo brie is essentially Passover-friendly French toast. The basic proportion is one matzo per egg, so if you're cooking for a crowd, increase the ingredients proportionally.
4 pieces matzo bread
4 eggs
2 tablespoons canola oil
Granulated sugar, to taste

total: 20 minutes

colander or wire strainer

large mixing bowl
medium skillet
1. Fill a small saucepan with water and bring to a boil.
2. Break up the matzo into roughly 2-inch squares. Put the matzo pieces in a colander and set the colander in the sink. Slowly pour the boiling water over the matzo to soften. Shake to remove extra water and set aside.
3. Beat the eggs in a large mixing bowl. Add the matzo and toss gently to coat with the eggs.
4. Heat the oil in a medium skillet over medium heat. Pour in the egg-matzo mixture and press into a large pancake. Cook until golden-brown on one side, then flip the whole thing over to cook on the other side. Cook until golden-brown on the other side and fully set. Sprinkle with sugar before serving.
