Steamed Broccoli With Lemon And Olive Oil
serves 2-4
To enhance the broccoli's flavor, season it with a sprinkling of salt and pepper as soon as it's moist with steam. Check its tenderness with the point of a knife, remembering that it will continue to cook off the heat.
1 1/2 pounds broccoli (1 bunch), cut into florets
1 tablespoon olive oil
1 lemon
prep: 10 minutes
total: 20 minutes
large pot with steamer basket
peeler
large bowl
1. Fill a large pot a quarter to a third of the way up with water, cover with the steamer basket and bring the water to a boil.
2. Meanwhile, cut the broccoli into large florets. Cut off and discard the tough bottom part of the stems, and peel any remaining thick stems with a pairing knife.
3. Put the broccoli in the steamer basket and steam until it's bright green and tender, 5-7 minutes. Drizzle the steamed broccoli with olive oil and a squeeze or two of fresh lemon juice, and add more salt and pepper to taste.
