Heirloom Tomato And Herb Salad
serves 4This is a great summer salad to serve alongside any grilled meat. We also love to serve it with quesadillas and burritos in lieu of homemade salsa. If you have any leftover, chop it up and use it the next day in a sandwich.
2 tablespoons fresh lime juice
2 tablespoons Champagne vinegar
1/2 shallot, minced
1 teaspoon salt
1 teaspoon honey
1/2 cup olive oil
8 large heirloom tomatoes, thickly sliced
1 bunch cilantro leaves (1 cup)
1 bunch flat-leaf parsley leaves (1 cup)
1/2 cup thinly sliced mint leaves
1/4 cup minced chives
prep: 10 minutes
total: 20 minutes
2 medium bowls
4 chilled plates
2. Arrange the tomatoes evenly among 4 chilled plates, or arrange all the tomatoes in one overlapping layer on a large platter.
3. While whisking constantly, drizzle the olive oil in a thin stream into the vinegar mixture until the dressing emulsifies. Add more salt and pepper to taste.
4. In a medium bowl, toss together the cilantro, parsley, mint and chives. Drizzle a little of the vinaigrette into the herbs and stir.
5. Drizzle the rest of the vinaigrette over the tomato slices, then sprinkle the herb mixture over the tomatoes.
