Peanut sauce is an easy sauce to make. I rarely measure when I put it all together. I have given measured amounts here, but sauces like this are not a science. Taste-testing is the only way to balance the flavors properly. So, taste!
1 1/2 cups brown rice
For the sauce:
1 1/2 cups hot gluten-free broth
2-3 generous tablespoons smooth peanut butter
1 tablespoon molasses
1/2 lime, juiced
Pinch cayenne pepper, to taste
2 tablespoons canola or peanut oil
1-2 teaspoons curry powder
1 tablespoon grated fresh ginger
1 red onion, diced
3 cloves garlic, minced
2 cups chopped chicken breasts or thighs
2 cups broccoli florets
1 large red bell pepper, thinly sliced
2 medium carrots, cut into matchsticks
2 cups thinly shredded cabbage
