Yorkshire Pudding Popovers

makes 12 popovers

Yorkshire pudding is an English side dish that is traditionally served with roast beef. Don't let the name fool you. It isn't a pudding at all, but a gorgeous, fluffy muffin.

ingredients

1 tablespoon chives, chopped
1 cup flour
1/4 teaspoon salt
1/4 teaspoon thyme
2 eggs
1 cup milk

prep: 10 minutes
total: 30 minutes

two mixing bowls
whisk
ladle
muffin pan

instructions

1. Preheat oven to 450F.

2. Chop chives and combine with flour, salt and thyme.

3. In separate bowl, whisk together eggs and milk.

4. Gradually add the milk mixture to the flour mixture until batter is smooth. (Refrigerate up to 1 hour, if desired.)

5. Butter the bottoms of a muffin pan and then fill each one halfway with batter.

6. Bake in the oven for 15-18 minutes, or until puffed and golden.
