Fried Almonds

This is a classic party snack with some Spanish flavors. While they're meant to be a tapas offering, these almonds also make a great finish for green salads and single vegetable dishes.
1/3 cup olive oil
3/4 pound whole, blanched almonds
1 teaspoon ground cumin
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon sea salt (or some other coarse salt)

1. Heat the oil in a large sauté pan over medium-high heat. Working in a couple of batches, add the almonds to the pan, reduce the heat to medium-low, and sauté until the almonds turn a light brown, 4-6 minutes.
2. Remove the almonds with a slotted spoon to a paper towel-line plate and do the next batch (adding more oil if you need it).
3. Place the almonds in a bowl and season with the spices and salt, tossing well to combine.
