Orzo With Mozzarella And Mint

With so few ingredients, this simple pasta dish highlights how the creamy texture of the mozzarella and al dente bite of the orzo play off of each other. Try this with any grilled meat.
1 pound orzo
1 cup mozzarella cheese, diced
1/2 cup grated parmesan
1/3 cup chopped fresh mint
1 tablespoon olive oil

1. Bring a large pot of water and 2 teaspoons salt to a boil. Add the orzo and cook until it's al dente.
2. Prep the mozzarella, parmesan and mint and combine them in a large bowl.
3. When the orzo is done, drain it and toss it with the mint, mozzarella and parmesan. Add the olive oil and season to taste with salt and pepper.
