Not Yet Spring…

Technically, Spring is here, but the weather has been cold and rainy. It is even still a pleasure to finish with a warm dessert. Certainly, there are as yet no good new fruits or berries in my part of the world. And so it is best to make gala with apples and citrus.
While this Apple Brown Betty can be eaten with pleasure when cool, it is even better eaten hot. It can be assembled ahead of time and then baked while you’re eating dinner.
A more unusual dessert that I highly recommend is Apple Snow. Frothy and light (with Belgian antecedents), it is particularly good after a rich meal. If your apples are a little tame, add a teaspoon or so of lemon juice. I like to serve it spooned into Champagne glasses—very festive.
Oranges with pomegranate and walnut sauce are beautiful and quick; they can be done an hour before dinner.

Mmmm, the smell of baking apples. A true comfort.
–We woke up to snow this morning in Oshkosh, WI. So much for spring.

Apple snow sounds very intriguing! I think I will give this a try.
