Grated carrot and celeriac salad

This grated salad is delicious as a light lunch on its own, as a side to roasted chicken or as a condiment spread on just about any sandwich.
Grated celeriac and carrot salad
serves 2-4
Ingredients:
1 celery root, peeled and coarsely grated
2 medium carrots, peeled and coarsely grated
2 tablespoons mayonnaise
1 tablespoon lemon juice
1/4 teaspoon red pepper flakes
1/2 teaspoon kosher salt
Instructions:
Grate the celeriac and carrot into a large bowl. Add the remaining ingredients and stir to combine.

Yum! This DOES look like a wonderful salad and sandwich condiment. I’ll have to try it out!
