Meatball Soup Three Ways

What to cook for dinner at the end of a long week of April showers, when winter is over but it doesn’t quite feel like spring?
One of our favorite transitional weather dishes is a meatball soup — warm, light and brothy but with a moderate dose of protein to make it feel more substantial. Try a spicy turkey meatball and cabbage soup, an Italian beef, pork or veal meatball soup with orzo and carrots or a classic Mexican Albondigas soup with ground beef.
