Sweet or salty?
Both, at the same time!
Which ingredient(s) do you use most?
Probably tamari.
What’s the cooking sound you most love?
Chopping kale or peeling oranges.
What’s your favorite cooking smell?
Baking bread, or baking apple pies.
What are the qualities you most admire in a dish?
Few ingredients but major taste.
What is your most treasured possession in the kitchen?
My Wüsthof knives. There’s nothing like the right knife for the job. (Wait, that sounds creepy.)
What is a dirty word in your kitchen?
“Frozen vegetable mix,” “TV dinner,” “minute rice”… I could go on.
What are afraid to do in the kitchen?
Make vegan marshmallows. Last time I destroyed my clothing and coated my kitchen in caramelized sugar.
What won’t you eat?
Anything that has a face. Or came from something with a face. And beets.
Have you ever lost your appetite for a food you once loved?
Cheese.
Have you ever had a religious conversion involving a food you once did not believe in?
Brussels sprouts! I used to hate them, now I LOVE them. With fervor.
If you could choose one historical or living cook to make you a meal right now, who and what would it be?
Eric Tucker! He’s the chef at Millennium in San Francisco.
What is your favorite food-related scene from literature or the movies?
When Anton Ego takes a bite of ratatouille in Ratatouille. So good!
If you wanted to seduce someone, what would you cook?
I’d try to figure out a few of their favorite ingredients, then create something totally new just for them.
If heaven exists, what do you hope they have on the menu?
I kind of hope they have a kitchen.
What’s your poison?
Rum!
What are you craving right now?
Well, now I’m craving a rum and coke with lime. Thanks a lot.
